The Kletskoppen a thin, hard, crunchy cookie. The origin is still much debated. The Belgian Bruges and the Belgian Veurne are known for these cookies. They will state the origin under the name “baldheads” and will both claim that the origin of the gossip is in their city. The Bruges chatterboxes are called 'dentelles de Bruges' in French. Besides the Belgians, French patissiers will claim that their 'mignots' (named after an 18th century Parisian pastry chef) are more or less the predecessors of their famous tuiles, which have the same basic preparation as the kletskoppen. However, a document from the early 17th century will show that the chatter heads, then called sea heads at the time, come from the Netherlands. To be precise, they descend from Leiden.
