Eggplants from holland are elongated, pear or egg-shaped fruits, dark purple and shiny.
Taste: Eggplants have fresh, fairly neutral flavor.
Storage: Outside the refrigerator.
Prepare: Wash eggplant and remove stem and crown. Peel the eggplant, but do not cut into slices or cubes. Eggplant tans so incorporate it directly. For baking: eggplant slices in about 10 minutes with spicy seasoning until cooked. For Stuffed eggplant: cut lengthwise and cook for 5 minutes. Fill the eggplant with beef mixture and bake 25 to 30 minutes in the oven. Eggplants can be fried, braised, boiled and fried. Eat them not raw.
