Farmers sausage or sausage is a hard spicy sausage made of chunks of pork and pork fat.
Sausage is traditionally eaten at stew dishes such as sauerkraut and kale, sometimes in combination with a smoked sausage. Nowadays sausage especially popular as a snack, like the Groninger sausage (with lots of cloves) or the milder Frisian sausage. In Drenthe is the harder variant Kale sausage.
Sausage was originally created by cutting waste, with stores on the small pieces of meat left over when divide into pieces of meat. Also the dry sausage is a sausage in that respect.
